In a process for preparing proteins from a protein-containing substance, the substance is dispersed in an alkaline solvent with a pH of over 11.5 and at a temperature of under 30 °C. The proteins in the substance are thus dissolved. The resulting solution is then neutralised and the proteins in it are concentrated. To improve the profitability of the process in large-scale manufacture, the protein-containing substance is treated with a protease before dispersion in the alkaline solvent.

Selon un procédé de préparation de protéines à partir d'une substance contenant des protéines, la substance est dispersée dans un solvant alcalin avec un pH supérieur à 11,5, à une température inférieure à 30 ~C. Les protéines contenues dans la substance sont ainsi dissoutes. Ensuite, la solution obtenue est neutralisée et les protéines contenues dans la solution sont concentrées. Pour améliorer la rentabilité du procédé dans le cas d'une application à l'échelle industrielle, la substance contenant les protéines est traitée avec une protéase avant sa dispersion dans le solvant alcalin.
