There is disclosed a fermentation process for producing glutathione which comprises (a) the obtainment of a biomass pre-culture by pre-cultivating, in aerobic conditions, a strain of a glutathione producing yeast wherein the glutathione content per biomass unit is higher than 1.2% w/w; (b) the cultivation, in aerobic conditions, of the resulting biomass pre-culture such that the resulting biomass density is higher than 50 g/l; (c) the activation of the cultured biomass; and (d) the recovery of the cultured biomass, extracting glutathione at a pH equal to or lower than 6 and purifying the resulting glutathione. The process allows to obtain glutathione with high yields and relatively low costs.

Divulgation d'un procédé de fermentation pour produire du glutathion. Ce procédé comprend : a) l'obtention d'une pré-culture de biomasse en pré-cultivant dans des conditions aérobies une souche d'une levure produisant du glutathion, dans laquelle le teneur en glutathion par unité de biomasse est supérieure à 1,2 % en poids; b) la culture dans des conditions aérobies de la pré- culture de biomasse obtenue, de manière à ce que la densité de biomasse résultante est supérieure à 50 g/l; c) l'activation de la biomasse cultivée; d) la récupération de la biomasse cultivée, en extrayant le glutathion à un pH de 6 ou moins et en purifiant le glutathion ainsi obtenu. Ce procédé permet d'obtenir du glutathion avec un rendement élevé et à relativement faible coût.
