ABSTRACT A process and apparatus for preparing proteinaceous foodstuffs from cereal grains and the eventual recovery of starch hydrolysates is described. The cereal is ground, soaked in water and then mechanically separated into a sediment containing most of the insoluble materials and starch A, and a suspension containing at least 60% of the nitrogenous materials present which is stripped to isolate an insoluble fraction containing 60% proteins and a float fraction. The sediment is mixed with the float fraction to form a suspension containing 90% of the starch which is then hydrolysed with amylase. The resultant mixture is separated into a soluble hydrolysate and an insoluble fraction which is fermented in aqueous suspension to enrich yeast proteins which are separated therefrom and the effluent recycled.
