Cette invention, qui a trait à de nouveaux assaisonnements liquides ayant la saveur de légumes marinés dans une pâte de son de riz salée ainsi qu'à des assaisonnements liquides limpides de même saveur, concerne également un procédé de production de ces assaisonnements. Elle porte, en outre, sur un nouveau micro-organisme appartenant à l'espèce Corynebacterium entrant dans la production de ces assaisonnements. Elle concerne, de surcroît, un procédé d'élaboration d'une solution contenant de la lactone, celle-ci étant extraite du milieu de culture d'un micro-organisme producteur de lactone, etc. Il est encore question d'une nouvelle bactérie appartenant à l'espèce Corynebacterium utilisée pour produire les assaisonnements liquides susmentionnés et capable de produire de la .gamma.-dodécalactone et/ou de la .gamma.-dodécelactone.
