A process for fractionation of dairy whey is described which enables various whey constituents in particular, alpha-lactalbumin and beta-lactoglobulin, to he recovered in substantially pure form. Lactose may also be recovered. The mineral content of raw whey is reduced so that the calcium content is less than 120 parts per million. Thereafter, the whey is treated to allow the lactose to crystallize out for removal and selectively to flocculate the alpha-lactalbumin, leaving a liquor containing substantially pure beta- lactoglobulin.

Un procédé de fractionnement de petit-lait permet de récupérer, sous une forme pratiquement pure, différents constituants du petit-lait, notamment l'alpha-lactalbumine et la bêta-lactoglobuline. Le lactose peut également être récupéré. La teneur en substances minérales du petit-lait cru est réduite, de sorte que la teneur en calcium soit inférieure à 120 parties par million. Le petit-lait est ensuite traité afin de permettre la cristallisation du lactose, en vue de son extraction, et la floculation sélective de l'alpha-lactalbumine, de sorte qu'il ne reste qu'une liqueur contenant de la bêta-lactoglobuline pratiquement pure.
