A method for the separation of proteins from a milk product wherein the milk product is mixed with a precipitating agent selected from ethanol and acetone and the mixture agitated for a period of time sufficient to form a precipitate which is subsequently recovered. The proteins recovered include enzymes which are normally destroyed during pasteurization.

L'invention porte sur un procédé de séparation des protéines du lait, le lait étant pour cela mélangé à un agent de précipitation sélectionné parmi éthanol et acétone, puis le mélange est agité sur une durée suffisante pour former un précipité qui est ensuite récupéré. Les protéines récupérées comprennent des enzymes qui sont normalement détruites lors de la pasteurisation.
