Q.1051 ABSTRACT OF THE DISCLOSURE A textured casein-containing material is prepared by extruding into a gaseous medium a plastic mass comprising water and a proteinaceous material including at least 60 wt% of either rennet casein or a mixture of rennet casein and a caseinate salt. The proteinaceous material may additionally contain vegetable and animal derived protein isolates and concentrates and acid casein, skim milk powder and gluten. The extrudate may be in the form of bands or fibres and can be formed at a temperature of below 100°C without the use of extrusion aids. The product is stable in boiling water and may be used as meat or fish analogue or extruder. S9Gl03
