ABSTRACT Starting with a protein material having a three- dimensional organisation and solely by applying osmotic force, the process comprises exchanging the water in said protein material with an osmotic agent by compacting the protein material in an envelope of semi-permeable material which is closed and then immersed in a solution of osmotic agent. The product obtained may be uses in the production of deep-frozen, preserved or dehydrated food products.
