ABSTRACT OF THE DISCLOSURE A process for the production of analogue meat materials is disclosed. Analogue meat materials which are white in color and with a texture closely comparable with that of natural meats are produced by kneading a suitable vegetable protein with a desired foaming agent and a powdery food, and thereafter subjecting the resultant admixture to gelation by heating in water.
