The present invention relates generally to a process of isolating isoflavones/phytoestrogens from a plant protein and producing plant proteins for use in nutritional products that have reduced levels of phytoestrogens, manganese and/or nucleotides. More specifically, this invention is directed to a process of using ion exchange technology to remove phytoestrogens, manganese or nucleotides from plant proteins. Either the removed phytoestrogens or the treated plant protein may be retained for further processing. The phytoestrogens have utility as pharmaceuticals. The treated plant protein has utility in nutritional products. This invention is also directed to isoflavones prepared by the process, to plant protein products resulting from the inventive process, and to nutritional products that use the plant protein product as a source of amino nitrogen.
La présente invention porte d'une manière générale sur un procédé visant à isoler d'une protéine végétale des isoflavones/phytoestrogènes et à produire des protéines végétales à utiliser dans des produits alimentaires à teneur réduite en phytoestrogènes, en manganèse et/ou en nucléotides. Ladite invention porte plus spécifiquement sur un procédé d'utilisation de la technique d'échange d'ions destinée à extraire des protéines végétales les phytoestrogènes, le manganèse ou les nucléotides. On peut alors retenir pour traitement supplémentaire soit les phytoestrogènes ainsi extraites, soit la protéine végétale ainsi traitée. Les phytoestrogènes trouvent leur utilité en tant que produits pharmaceutiques, tandis que la protéine végétale traitée trouve son utilité dans les produits alimentaires. L'invention porte également sur les isoflavones préparées avec ce procédé, sur les produits de protéines végétales résultant du procédé faisant l'objet de l'invention, et sur des produits alimentaires dans lesquels le produit de protéine végétale est utilisé comme source d'azote aminé.
