A process of producing glyceride oil having a very low content of non- hydratable phosphatides from fatty seeds and fruits is disclosed. In the process, the fatty material is instantaneously and for a very short time exposed to a high temperature at a controlled water content. The glyceride oil extracted from the thermally treated material has after water-degumming the same low contents of phosphorous, iron, calcium and magnesium as can be achieved by treatment with strong acid and alkali (superdegumming) of a conventionally produced glyceride oil.
Procédé de production d'huile glycéridique à très faible teneur en phosphatides non hydratables, à partir de graines grasses et de fruits gras. Selon le procédé, on soumet la matière grasse à un traitement thermique instantané à une température élevée pendant une très courte durée tout en régulant sa teneur en eau. L'huile glycéridique extraite de la matière traitée thermiquement présente, après démucilage à l'eau, les mêmes faibles teneurs en phosphore, en fer, en calcium et en magnésium que l'on peut obtenir à l'aide d'un alcali et d'un acide fort (super-démucilage) dans la production traditionnelle de l'huile glycéridique.
