-17- ABSTRACT Deodorized, decolorized and water-soluble processed hemoglobin can be obtained by dispersing and dissolving raw hemoglobin in water under alkai conditions of pH 9 or higher and then treating it with hydrogen peroxide. The resulting processed hemoglobin is suitable as a raw material of food.
