The present invention provides a method for processing defatted oil seeds, comprising the steps of: (a) solubilizing at least a portion of the protein contained in the oil seeds to produce suspended residual solids and a first solution comprising protein, phenolic-protein complexes, and free phenolic compounds; (b) separating at least a portion of the free phenolic compounds from the first solution and recovering a free phenolic reduced solution; and (c) treating the free phenolic reduced solution to precipitate at least a portion of the protein as a precipitated protein isolate and recovering a treated solution containing a soluble protein isolate. Novel protein products are also disclosed. Food and drink products containing the novel protein products are also disclosed.

L'invention concerne un procédé de traitement de graines oléagineuses dégraissées, caractérisé en ce qu'il comprend les étapes suivantes : (a) mise en solution d'au moins une portion de la protéine contenue dans les graines oléagineuses en vue de produire des matières solides résiduaires en suspension et une première solution comprenant une protéine, des complexes phénoliques-protéine et des composés phénoliques libres ; (b) séparation d'au moins une portion des composés phénoliques libres de la première solution, et récupération d'une solution réduite phénolique libre ; et (c) traitement de la solution réduite phénolique libre pour précipiter au moins une portion de la protéine sous forme d'un isolat de protéine précipité, et récupération d'une solution traitée contenant un isolat de protéine soluble. L'invention concerne également de nouveaux produits protéiniques, ainsi que des produits alimentaires et des boissons contenant les nouveaux produits protéiniques.
