A process for the production of a hydrolysed protein which comprises hydrolysing a plant or animal protein with hydrochloric acid to give a slurry and then, before or after filtering off the residual unhydrolysed material, treating with alkali to a pH of from 8 to 14 and holding for a period of time to reduce the amount of undesirable chlorinated compounds and readjusting to a pH of from 4 to 7 to give a liquid hydrolysed protein filtrate.

Méthode pour la production d'une protéine hydrolysée, consistant à hydrolyser une protéine végétale ou animale avec de l'acide chlorhydrique pour l'obtention d'une suspension épaisse, puis, avant ou après la filtration de la substance résiduelle non hydrolysée, à traiter la suspension avec un alcali jusqu'à un pH de 8-14 et à le maintenir dans cette plage pendant un certain temps afin de réduire la quantité de composés chlorés indésirables, enfin à réajuster le pH à 4-7 pour l'obtention d'un filtrat liquide contenant la protéine hydrolysée.
