The present invention discloses a method for making a multi-grain, whole grain baked snack food product with a soft, crunchy texture similar to a cracker. Ingredient formula ranges have been determined that maximize the amount and number of nutritious whole grains present in the snack food, while still keeping the texture soft and crunchy, and the color and flavor acceptable. The ingredients are combined with water to make a dough, which is then sheeted and cut into pieces. The pieces are baked to produce a multi-grain, whole grain baked snack food.
La présente invention concerne un procédé permettant de réaliser un produit alimentaire de type snack cuit au four aux multigrains, aux céréales complètes ayant une texture molle, croquante similaire à un cracker. Différentes formules d'ingrédients ont été déterminées pour maximaliser la quantité et le nombre de céréales complètes nutritives dans l'aliment de type snack tout en maintenant la texture molle et croquante, et la couleur et le goût acceptables. Les ingrédients sont combinés à de l'eau pour faire une pâte, qui est ensuite laminée et coupée en morceaux. Les morceaux sont cuits pour produire un aliment de type snack cuit au four aux multigrains, aux céréales complètes.
