2060655 9117665 PCTABS00008 The present invention provides a proteinaceous, water-dispersible microparticulated denatured proteins which in a hydrated state have a substantially smooth, emulsion-like, organoleptic character and which may replace all or part of the normal fat and/or oil content in a foodstuff. A microparticulated denatured proteins product may be produced from whey proteins by controlled heat denaturation under high shear conditions at a pH greater than the midpoint of the isoelectric curve of the whey proteins. The resulting product may be used to replace the undesired fat normally found in popular food products.
