The invention concerns a puff pastry biscuit for refrigerated or frozen food product having a laminate structure containing 6 to 10 layers of puff pastry, a thickness of not more than 2 mm, cooked between two heated surfaces so as to prevent the puff pastry from expanding and coated with a composition, particular fat acting as a moisture barrier. Said biscuit is either included in or associated with a composite ice cake comprising at least a layer of said biscuit included in a volume of cream and wherein the biscuit layers are separated from one another by cream layers.
Le biscuit feuilleté mince pour produit alimentaire réfrigéré ou congelé a une structure laminée contenant 6 à 10 feuillets de pâte feuilletée, une épaisseur d'au plus 2 mm, il est cuit entre deux surfaces chauffées de manière à empêcher le développement de la pâte feuilletée et il est enrobé d'une composition, notamment grasse servant de barrière d'humidité. Ce biscuit sert d'inclusion ou d'annexe dans un gâteau glacé composite comprenant au moins une couche du biscuit précédent incluse(s) dans une masse de crème et dans lequel les couches de biscuit sont séparées les unes des autres par des couches de crème.
