ABSTRACT OF THE DISCLOSURE Fish mince contaminated with unwanted particles, such as skin, cartilage or bone, is refined by feeding it into a nip between a flat surface of a rotating perforated disc and a conical surface of a roller. The disc and roller surfaces are urged together with a pressure that is sufficient to cause the roller and the disc to rotate together and the mince particles to pass through the disc, but insufficient to deteriorate the texture of the mince particles by reducing them to a puree, or to force the unwanted particles through the disc.
