The present invention relates to compositions and methods for reversing advanced glycosylation end product-mediated cross-linking and protein aging. Accordingly, compositions are described which comprise thiazolium compounds substituted with heterocyclic groups which are capable of reversing the formation of advanced glycosylation end product cross-links. Both industrial and therapeutic applications for the invention are disclosed, as food spoilage and animal protein aging can be treated. Such compounds have particular application in the treatment of protein aging such as is responsible for the complications of aging and diabetes.
La présente invention concerne des compositions et des méthodes d'inversion des liaisons croisées et du vieillissement protéinique induit par les produits finals de glycosylation avancée. Par conséquent l'invention concerne des compositions comprenant des composés de thiazolium substitués par des groupes hétérocycliques capables d'inverser la formation de liaisons croisées de produits finals de glycosylation avancée. Sont également décrites des applications industrielles et thérapeutiques de l'invention, étant donné que l'on peut traiter l'altération des aliments ainsi que le vieillissement des protéines animales. Ces composés présentent une application particulière au traitement du vieillissement protéinique responsable des complications du vieillissement et du diabète.
