A method for providing an acidulant effect in a food. A food is prepared including sodium bisulfate in an amount effective to act as an acidulant. Moisture is added in an amount effective to dissolve the sodium bisulfate. In a preferred embodiment, a leavened baked good is prepared including a baking carbonate, and sodium bisulfate in an amount effective to react with the baking carbonate to release carbon dioxide to leaven the baked good. A food composition including sodium bisulfate in an amount effective to act as an acidulant in the food, and moisture in an amount effective to dissolve the sodium bisulfate.

L'invention concerne un procédé créant un effet acidulant dans un aliment. On prépare un aliment en utilisant une quantité efficace de bisulfate de sodium pour que celui-ci agisse comme un acidulant. On humidifie suffisamment pour faire se dissoudre le bisulfate de sodium. Dans un mode de réalisation préféré, un produit de boulangerie levé est préparé avec un carbonate de levage et une quantité efficace de bisulfate de sodium pour qu'il réagisse avec le carbonate de levage afin de libérer du dioxyde de carbone et de faire lever le produit de boulangerie. Cette invention a trait également à une composition alimentaire comprenant une quantité efficace de bisulfate de sodium devant agir comme un acidulant d'aliments et une teneur en eau suffisante pour dissoudre ce dernier.
