ABSTRACT OF THE DISCLOSURE: A method of reducing the caloric content of a food stuff composition is disclosed, which comprises the substitution of a mixture of oligomers derived from degradation of a cellulose derivative for at least a portion of the fat, sugar, carbohydrate or other highly caloric ingredient contained in the foodstuff. The mixture of oligomers which is used as a substitute has an average degree of polymerization in the range of 3 to 300 and an average molecular weight in the range of 500 to 100,000. Also disclosed are low calorie food products obtained by this method, which products are acceptable to the consumer.
