A method of producing a packaged batter which does not require refrigeration and has a useful shelf life is disclosed. The method includes forming the batter by initially sterilizing flour and mixing it with other sterile ingredients. The batter is then sterilized by subsequent exposure to an ultraviolet sterilizing beam before packaging. The entire process is performed in a common sterile environment. A system for producing this batter is also disclosed.

La présente invention concerne un procédé de production d'une pâte à frire emballée qui ne requiert pas de réfrigération et a une durée de conservation utile. Le procédé comprend la formation de la pâte à frire initialement par stérilisation de farine et mélange de celle-ci avec d'autres ingrédients stériles. La pâte à frire est ensuite stérilisée par exposition consécutive à un faisceau ultraviolet stérilisant avant emballage. Le processus entier est effectué dans un environnement stérile commun. Un système pour produire cette pâte à frire est également décrit.
