A food product comprising a matrix of fibres such as proteinaceous fibres. The matrix having inclusion bodies dispersed therein. The inclusion bodies may be of solid, liquid or gaseous nature and may be mechanically robust. The inclusion bodies may comprise particles of oil, fat, inorganic salt, insoluble material, soluble polymer, insoluble polymer, or mixtures thereof. Preferably the product is an extrudate.

Cette invention concerne un produit alimentaire comportant une matrice de fibres telles que des fibres protéiques, ladite matrice contenant une dispersion de corps d'inclusion. Ces corps d'inclusion peuvent être solides, liquides ou gazeux et peuvent posséder une certaine robustesse mécanique.
