ABSTRACT OF THE DISCLOSURE In the manufacture of wafers, water to flour ratio of about 1.6 :1 is used when preparing the batter. The fat content of the batter introduced by means of vegetable oil, is preferably in a ratio of vegetable oil to flour of about 7:100 and in the case of the particularly preferred wafers makes up 2.4 per cent based on the finished batter. The amount of rising agents, based on the finished batter, is preferably 0.08 by weight and particularly good results are achieved when 0.04 per cent by weight of sodium bicarbonate and 0.04 per cent by weight of ammonium bicarbonate, in each case based on the batters, are used as the rising agents. The advance in the art resides in an improved strength of the wafer sheet whereby wafer can be made in relatively small thickness and smooth on surface, as opposed to relatively thick wafers of prior art frequently using reinforcement ribs across the surface.
