Abstract A colouring agent is formed from glucan-containing yeast cell ghosts, which are substantially intact yeast cell walls, and a colour source. The colouring agent may be formed from natural substances and may be used to colour foodstuffs, cosmetics and pharmaceuticals. Yeast cell ghosts with less undesirable flavour and colour are produced by extracting yeast debris, having not more than 20% by weight solids content, with acid, treating the extracted debris with alkali, separating whole cells and leaving a residual material rich in disrupted but otherwise intact cell walls, and bleaching the residual material.
