A method for stuffing food product into a tubular food casing by continuously filling a tubular food casing to obtain a predetermined linear rate of movement of stuffed food product; moving a closing device with the food casing at said predetermined linear rate of movement; activating said closing device to apply a closure in the form of a tie or clip to segregate the stuffed food product into links while the stuffed food product continues to move at the predetermined rate; and supporting the filled food casing during the filling and closing by means of a roller table comprising indented rollers and upon which the filled food casing rests, the roller table being provided with opposing link side supports containing bearings which support the rollers and which permit the rollers to freely rotate. The roller table lacks a roller directly beneath the closing device to form a space which permits closing of the food casing. The link side supports move in the direction of movement and at the speed of the closing device so that the space stays beneath the closing device at all times during its motion and so that the rollers move in the direction and speed of the closing device. The invention further includes a machine for practicing the method.
La présente invention a pour objet une méthode pour introduire la farce dans des boyaux tubulaires par remplissage continu d'un boyau tubulaire en vue d'obtenir un débit linéaire prédéterminé du produit alimentaire; la méthode en question implique le déplacement d'un dispositif de fermeture à la vitesse de déplacement linéaire du boyau; la méthode implique aussi l'actionnement du dispositif de fermeture en question, qui consiste en la mise en place d'une attache ou d'un genre de pince servant à segmenter le boyau pendant que le produit alimentaire continue de se déplacer à la vitesse prédéterminée; la méthode implique aussi le support accordé au boyau durant les opérations de remplissage et de fermeture à l'aide d'un train de rouleaux comportant des rouleaux indentés sur lesquels le boyau farci repose, le train de rouleaux comportant des supports latéraux contenant des coussinets sur lesquels les rouleaux tournent librement. Le train de rouleaux n'offre aucun support direct sous le dispositif de fermeture, ce qui a pour effet de créer un espace destiné à permettre l'opération de fermeture. Les supports latéraux se déplacent dans le sens du défilement et à la vitesse du dispositif de fermeture, de manière à maintenir l'espace facilitant l'opération de fermeture en alignement constant sous le dispositif de fermeture, et de façon à ce que les rouleaux tournent à la fois dans la même direction et à la même vitesse que le dispositif de fermeture. L'invention vise également une machine permettant la mise en oeuvre de cette méthode.
