Hart ABSTRACT The organoleptic acceptability of textured protein materials simulating loose, cooked ground meat is desirably improved by processing which enhances the textural diversity of the material. This process involves agglomerating textured protein materials with a heat-settable binder and heat-setting the agglomerate. The heat-setting is preferably accomplished by frying the agglomerate.
