Abstract of the disclosure A process for producing anisotropic structurates from comminuted muscle tissue of cold- and warm-blooded animals, preferably from fish which has been kept in intermediate storage, by freeze texturization and, if necessary, by thermal solidification of the raw material, which has been proteolytically pre-treated, supplemented by additives - including structure enhancers and texture regulators - and pre-formed. The process is characterized by the facts that the mechanically comminuted and deboned muscle tissue is subjected to a defined partial proteolytic degradation with the help of exogenous proteases of animal, plant and microbiel origin and that albuminar proteins, if necessary polysaccharides, lipids and protease inhibitors as structurizing fixatives and tenderizers are added before the: directional freeze texturization starts.
