The invention relates to a method for producing transglutaminase-cross-linked proteins of vegetable origin, wherein a fractionation of protein extract, protein curd, protein concentrate, protein hydrolyzate and/or protein isolate is carried out by centrifugation and/or ultrafiltration and/or regeneration is carried out and cross-linking with transglutaminase subsequently occurs at a temperature of between 0 and 60 ~C and a mass ratio of between 0.01 and 10 %.
