A food composition comprising a dry mix for production of a bakery product having an extended yeast-free and mold-free shelf life of at least 21 days. The dry mix comprising about 0.01% to about 1.0% of an encapsulated acid such as citric, fumaric, lactic, malic, phosphoric, sodium acid sulfate and mixtures thereof. A method of preparing bakery products having a shelf life enhancing composition are also described.

L'invention concerne une composition alimentaire contenant un mélange sec servant à produire un produit de boulangerie. Cette composition présente une durée de conservation allongée, sans levure et sans moule, d'au moins 21 jours. Le mélange sec selon l'invention contient entre environ 0,01 % et environ 1,0 % d'un acide encapsulé, tel que l'acide citrique, l'acide fumarique, l'acide lactique, l'acide malique, l'acide phosphorique, le sulfate acide de sodium et des mélanges de ceux-ci.
