An improved bagel made by forming toroidal dough pieces, treating the surface of the dough pieces with a warmed acidic solution, and freezing. After storage in a frozen state, the dough pieces are thawed and baked to produce bagels at least as desirable as fresh bagels produced by conventional processes which do not use an intermediate freezing step.

L'invention concerne un petit pain bagel amélioré fabriqué en formant des pièces de pâte toroïdales, et en traitant la surface de ces pièces à l'aide d'une solution acide chauffée, avant de les congeler. Après le stockage dans un état congelé, les pièces de pâtes sont dégelées et cuites pour produire des bagels au moins aussi appétissants que des bagels frais obtenus par un procédé traditionnel ne nécessitant pas d'étape de congélation intermédiaire.
