A process for the debittering of an enzymatically hydrolysed protein containing bitter tasting polypeptides which comprises incubating a slurry of the enzymatically hydrolysed protein with a culture of a foodgrade microorganism which is capable of producing peptidases which hydrolyse the bitter tasting polypeptides to give debittered substances.
