HYDROLYZED PROTEIN ISOLATE AND PROCESS OF PRODUCING Abstract of the Disclosure The present invention describes a process for the production of a hydrolyzed vegetable protein isolate which is suitable for use as an ingredient in a variety of products, but is particularly suitable for use in cheese products. A vegetable protein material is initially extracted with an aqueous extractant to form an aqueous protein extract. The pH of the aqueous protein extract is then adjusted to the isoelectric point of the protein to precipitate the protein. The precipitated pro- tein is formed into a slurry and enzymatically hydrolyzed to produce a predetermined number of available amino end groups as measured by fluorescamine reaction on said protein. This enables the production of enzymatically hydrolyzed protein isolates having predetermined levels of hydrolysis for use in a wide variety of food products.
