A method for improving the gelling properties of a protein which comprises irradiating the protein with electron beams to thereby improve the gelling properties of the protein, in particular, to shift the gelling temperature of the protein toward the high temperature region or to increase the ratio of the protein undergoing gelation.

L'invention concerne un procédé permettant d'améliorer les propriétés gélifiantes d'une protéine, qui consiste à irradier ladite protéine au moyen de faisceaux d'électrons de façon à améliorer les propriétés gélifiantes de cette protéine, en particulier, par décalage de la température de gélification de la protéine vers une région de température élevée ou par augmentation de la proportion de protéine soumise à la gélification.
